Duck liver stuffed quail is one of our most beautiful products. Stuffed with a Duck Foie Gras block, this quail is completely boneless. It is slowly flavoured in Cognac. Especially flavorsome, it’s texture is very smooth. This traditional Périgord style recipe really does these two quality products justice, by reuniting them and cooking them in such a natural style.
The Foies gras used for this original recipe are specially chosen from the farms of South-West France for their beautiful color, their suppleness, their size all of which are indicators of quality.
Boneless quail, Duck Foie Gras block (from France) 20%, pork gelatine. Cognac, salt, pepper and sugar.
